Thanksgiving Centerpieces: What to Order and When

Thanksgiving is the one day of the year when the flowers have to share a table with everything else. That changes what you should order, and it is the reason the prettiest arrangement in the shop is often the wrong one for a Thanksgiving table.

Here is what actually works, and when to get your order in.

The rule that matters most: keep it low

People have to talk across a Thanksgiving table. If they cannot see each other, the centrepiece has failed no matter how beautiful it is.

The test is simple: put your elbow on the table and rest your chin on your hand. Anything taller than your eye level is too tall. In practice that means roughly eight to twelve inches for a standard table.

If you want height - and height is lovely - go tall and narrow rather than tall and full, so people can see through it rather than around it. Candles do this job better than flowers.

Long table or round table

This changes the shape entirely and it is the first thing we will ask you.

• A long rectangular table wants either one long low arrangement down the middle, or three small ones spaced out. Three small ones are more flexible - people can move them to make room for the turkey.
• A round table wants one round centrepiece, designed to look right from every side rather than having a front.
• A table that will be crowded with dishes wants small arrangements you can lift with one hand. This is the honest reality of most family Thanksgivings.

What is actually in season

Late November in California is a genuinely good time for flowers, which not everyone realises:

• Chrysanthemums - the good garden varieties, nothing like supermarket mums. Bronze, rust, deep burgundy.
• Roses in warm tones - terracotta, copper, dusty orange. These hold beautifully.
• Hypericum berry - red, burgundy or peach berries that add texture without bulk.
• Seeded eucalyptus - the smell alone earns its place on a table.
• Wheat, dried grasses and preserved leaves - these last long past the day, which people like.
• Miniature pumpkins and gourds - used sparingly. Two look intentional; six look like a craft project.

Colours that work with a set table

The mistake is choosing flowers in isolation. They are going to sit next to your plates, your linens and a large brown bird.

Warm neutrals - cream, bronze, copper, soft gold - work with almost any table setting and photograph well under warm lighting. Deep burgundy and plum look wonderful with white china and can disappear against dark wood. Bright orange is fun and reads more Halloween than Thanksgiving to most people, so use it as an accent rather than the theme.

If your linens are a strong colour, tell us. We will build to them rather than against them.

When to order

This is the part worth taking seriously.

• Order by the Monday of Thanksgiving week. That is the honest deadline. After Monday we are working with whatever came in, and the choice narrows quickly.
• Two weeks ahead is better if you want something specific, a particular colour, or a large piece for a long table.
• Delivery is Tuesday or Wednesday of that week. We do not deliver on Thanksgiving Day itself.
• Wednesday afternoon is our busiest run of the year. If your address is out toward Shafter, ask for Tuesday.

Flowers built on Tuesday will be perfect on Thursday. That is what conditioning is for, and it means you are not dealing with a delivery van while you are trying to cook.

If you are travelling to someone else's house

A hostess arrangement is a different object to a centrepiece. Keep it small, keep it in its own container so nobody has to find a vase mid-cook, and hand it over already finished.

The kindest version is something that does not need to go on the table at all - a small piece for a kitchen counter or an entryway, so the host does not have to rearrange anything.

Making it last through the weekend

Most Thanksgiving arrangements can carry on into the weekend if you help them:

• Move it off the table overnight, somewhere cooler and away from the heating
• Top the water up on Friday morning
• Pull anything that has gone over rather than leaving it in

Arrangements with dried elements and berries will often still look good the following week, which is a quiet argument for including them.
